Baked Zucchini Chips

A dressed up vegetable for sure! The crisp cheese on these chips make them impossible to stop eating. Use our marinara recipe  for dipping, or if you have other favorite dipping sauces, so for it!


1 medium zucchini, sliced thin
1 egg, lightly beaten
¼ cup panko bread crumbs
3 TBSP parmesan cheese, grated
Salt
Pepper
½ tsp garlic powder
½ tsp oregano

  1. Preheat the oven to 425°. 

  2. Combine bread crumbs, cheese, salt, pepper, paprika, garlic powder and oregano in a small bowl. 

  3. Dip the zucchini rings into the beaten egg then dredge into the bread crumb mixture. 

  4. Place on a foil lined oiled baking sheet, do not crowd. 

  5. Drizzle with olive oil or spray.

  6. Bake zucchini chips for 13-16 minutes, or until golden brown and crisp, turning over halfway through cooking. 

  7. Serve warm and dip in tomato sauce or another of your favorites.
