Grilled Peaches, Burrata and Prosciutto with Smokey Vinaigrette

Once you realize you can grill everything, you try to grill anything! With peaches in a very short but sweet season, I like to add them to anything I can dream of. Here is a very simple but delicious recipe with burrata for some creaminess and of course some prosciutto, for, well, prosciutto. 


2 ripe peaches, cut in half, pits out
1 ball of burrata
5-6 slices prosciutto
6 cups greens, I love arugula but you can use any 

 Dressing:

½ cup olive oil
¼ cup red wine vinegar
1 Calabrian pepper, optional
1 tsp smoked paprika
1 tsp maple syrup
1 clove garlic, minced
Salt
Pepper

1. Light grill. 
2. Dust a little salt and a little smoked paprika on the peach halves, drizzle with oil. Place on grill and let cook until it begins to char, 5-7 minutes depending on grill. Remove. 
3. Whisk together all dressing ingredients. Alternatively, place in mason jar and shake until all mixed. 
4. Place arugula on platter or plate, slice peaches and tear burrata  and place on greens along with prosciutto. Drizzle with dressing.
