Cauliflower Fritters with Roasted Red Pepper Sauce

These fritters are amazing, and even more amazing is the red pepper sauce that goes with them!

1 head cauliflower

1 eggs

1 cup panko

1 cup sharp cheddar cheese, shredded

½ cup milk

2 tsp onion powder

2 TBSP olive oil 


  1. Break cauliflower into florets. Put a half an half inch of water in a saute pan, add salt and cauliflower. Cover and simmer until water is absorbed and cauliflower is soft, about 10 minutes. 

  2. Place cauliflower in a large bowl and add egg, panko, cheese, milk and onion powder. 

  3. Form into balls, a little larger than golf balls and slightly smash. 

  4. Place oil in a large saute pan over medium heat. When oil is hot, carefully place croquettes in one at a time, being careful not to crowd the pan. Cook for 5 minutes, flip over and cook another 5 minutes. 

  5. Drain on paper towels. Serve warm with roasted red pepper sauce or marinara.

Red Pepper Sauce

Red Pepper w Harissa


2 red bell peppers, seeded amd tops removed
1 onion, cut into quarters and peeled
4 cloves garlic
2 TBSP harissa paste
2 TBSP white wine (optional)
½ cup vegetable broth or chicken broth
Salt
2 TBSP Olive Oil

  1. Heat a sauce pan to medium and add olive oil. 

  2. Add onion and garlic cloves, cook 10 minutes. Add red pepper and cover, cooking 20 minutes on low with a lid on. 

  3. Remove lid and add harissa,  stir to coat and cook 3 minutes. Add wine and cook 3 more. Add broth, cook a few more minute and remove from heat. 

  4. Blend with immersion blender or wait for it to cool a bit and place in blender to blend. 

  5. Season to taste with salt.
