Sheet Pan Gnocchi

This is an extremely easy meal! Take some uncooked gnocchi and toss with great ingredients and bake for 20 minutes. In this rendition there is no meat but it would be very easy to add some sliced Italian sausage for some protein.

Sheet Pan Gnocchi

Feeds 4

1 lb gnocchi
2 cups cherry tomatoes
2 cups broccoli florets
8 oz fresh mozz balls
6 cloves garlic, peeled but whole
½ cup shredded basil
½ lemon
3 TBSP olive oil
Parmesan
Salt
Pepper
Red Pepper Flakes


  1. Turn the oven to 425 degrees.  

  2. Place gnocchi, broccoli,  tomatoes and garlic on lined sheet pan. Coat with olive oil and salt. Make sure the ingredients are in a single layer, not crammed onto the sheet. 

  3. Put in oven and bake for 15 minutes, removing to stir/flip. Add mozzarella,  basil and red pepper flakes. Bake another 10 minutes. 

  4. Remove from oven, squeeze lemon juice and toss, top with parmesan, olive oil, more salt (if necessary) and pepper. Enjoy warm!
